Torchy's Tacos started in 2006 with a mobile trailer, a little red Vespa, and a man with a passion for good food. The founder, Mike Rypka, left an official culinary specialist position to pursue his fantasies by putting all that he had into Torchy's Tacos. With another, trial menu prepared to serve yet no mouths to sustain, Rypka bounced on his Vespa and began tossing out examples trying to attract clients to his trailer. Before he knew it, individuals were energizing alongside the taco stand hollering, "damn these tacos are great!" and the Torchy's Tacos' inheritance started.
